Tom Yam soup

Ingredients

  • 700 ml of broth
  • 2 bulbs shallots
  • 3 cloves garlic
  • 3 Cayenne pepper
  • 80 ml peanut oil
  • 4 tomatoes or 1 tomato pink
  • 10 shrimp (tiger)
  • 10 gr. ginger
  • 1 sprig of lemon grass
  • 3 sheets Kaffir
  • 3 mushrooms
  • 3 shiitake
  • 3 oyster mushroom
  • 10 gr. Alpina (galangal)
  • 15 gr. sugar
  • 40 ml coconut milk
  • 1 lime
  • 80 gr. green coriander

Method of preparation

  • In blandora brought to a paste the shallots, garlic, hot pepper, tomatoes, with added 30 ml of oil. In a saucepan with 50 gr. oil passeruem the shrimp shells. Ginger cut into thin strips. 3 kinds of mushrooms cut into medium pieces. Add the Kaffir leaves, galangal, shrimp and cooked pasta. There sugar and squeezed lemon juice. Enter the milk, after three minutes, pour the broth. Feeding extracted the shell, and generously sprinkle with cilantro.
