- 2 long eggplant
- 2 pieces bitter green pepper, Jalapenio
- 2 pieces of red pepper, Jalapenio
- 2 PCs green onion
- 1 tbsp. vegetable oil
- 1 tsp brown sugar
- 1 tbsp lime juice
- 2 tbsp fresh cilantro
Method of preparation
- Eggplant should be cut into squares and sprinkle with salt, leave for 20 minutes. Then mix the sugar with the pepper and sprinkle the aubergines and fry them in vegetable oil until Golden brown.
- After removing from the pan, and then mix with the remaining ingredients and pour lime juice. This dish can be served when it is at room temperature, or straight from the fridge.
