Deviled eggs with saury


  • Ten eggs
  • 3 smoked saury
  • the feathers of green onions
  • 2 tbsp small salted caviar (fish ROE Pollock, capelin, pike)
  • blend: coriander, fennel and allspice
  • 30 grams sweet butter

Method of preparation

  • Add to peeled and diced fish, eggs, spices, and it’s in a soft state, the oil. Boiled and immediately dipped in cold water, the eggs released from the shell. Cut, divide them into two equal parts and obtain the yolks. The resulting «boat», filled in a previously prepared filler. Located on a wide, flat dish of egg, decorate with the finely chopped onion and grated egg yolk.
